What’s Cooking? Cauliflower Pizza

Did you start off this year with a goal to eat healthier and now after a couple of  weeks you find yourself craving pizza?  Then here is a recipe for a healthier option.  Instead of the usual bread crust, this pizza has a crust made of cauliflower.  It is another way to eat more veggies.

Ingredients:
2 cups “riced” cauliflower
1 cup grated mozzarella cheese
1 egg
pizza sauce
choice of pizza toppings

Directions:
*Place cauliflower pieces into a food processor and pulse a few times until the cauliflower is riced.  (refer to previous post to see how you can save time on this step with a little planning in advance.)

*Transfer riced cauliflower to a skillet and cook for 5 to 10 minutes stirring often.  When the cauliflower has softened remove from heat and allow to cool.

*When cool, place in a clean cloth and squeeze out as much liquid as possible.

*Place in a bowl.  Add cheese and egg.  Mix.

*Line a baking sheet or stone with a silicone mat or parchment paper and spray with olive oil.

*Spoon mixture onto parchment paper and form into a pizza crust that is about ¼ inch thick.   You can make a big pizza, but I prefer to make individual pizzas.  Individual-sized pizzas are easier to turn over and allow each person to chose the toppings they prefer.

*Bake at 400 degrees Fahrenheit until crust is lightly brown.

*Remove from oven.  Use a spatula to gently flip crust over.

*Add pizza sauce, cheese and your favorite cooked toppings.

*Return pizza to oven and bake until cheese is lightly browned.

*Pizza will be very hot so allow to cool, then enjoy.
